Sweet Beginnings During the Pandemic: Nowhere Bakery was born out of Maurizio and Saphira Rasti’s quest for delicious yet wholesome desserts during the pandemic. Faced with a lack of options that met their standards for both taste and clean ingredients, they decided to create their own sweet treats, leading to the inception of Nowhere Bakery in March 2020.
From Contractor to Creator: Before diving into the world of desserts, Maurizio Rasti worked as a contractor for Incubate Pictures. Armed with a degree in marketing from The Ohio State University, Maurizio ventured into entrepreneurship with Nowhere Bakery, showcasing his versatility and entrepreneurial spirit.
Baking Brilliance and Health Consciousness: Saphira Rasti, hailing from Costa Mesa, California, brings over a decade of baking and personal chef experience to Nowhere Bakery. Her journey to crafting delectable desserts took a turn towards health-consciousness after grappling with severe gut issues and subsequent health complications in her 20s.
A Fusion of Expertise: Saphira’s background in nutritional medicine and health coaching, coupled with Maurizio’s marketing acumen, forms the backbone of Nowhere Bakery’s mission to offer desserts free from dairy, gluten, refined sugar, and oils while ensuring they remain irresistibly delicious. Their shared passion for sweets and dedication to wholesome ingredients drive their innovative creations.
A recipe straight from Saphira for Gluten Free Banana Bread:
Wet Ingredients:
3 small spotty bananas
3 eggs
1/4 cup butter or coconut oil, melted
3 tbsp ground flax seeds mixed with 6 tbsp warm water
1 tsp Orange extract (or sub for vanilla)
1/3 cup coconut sugar
Dry Ingredients:
1 1/4 cup gluten free flour (I used @bobsredmill 1:1)
1 tsp baking powder
1/2 cup walnuts
1/2 cup chocolate chips
Directions:
Preheat oven to 350F conv bake
In a large bowl mash bananas
Whisk in remaining wet ingredients
Add dry ingredients and mix well leaving the walnuts and chocolate chips till last
Pour batter into a lined loaf tin
Bake for 45-50 mins
Let cool before slicing and devouring
